CHEESE OF THE WEEK: ARMENIAN STRING CHEESE IS FRESH CHANGE FROM MOZZARELLA

Armenian string cheese is an exotic change from fresh mozzarella if
you are looking for a mild, milky cheese with stretch.

Like mozzarella, Armenian string cheese is a filata cheese. This means
after the curds are formed, they are drained, then heated, salted and
pulled, doubled and pulled again and again, somewhat like taffy, to
form the elastic texture and fine separable strings we associate with
string cheeses. Then they are doubled up in pretty knots and stored in
brine or packaged in Cryovac. The cheese is sold fresh, with no aging.

According to Cheese.com, in Armenia it can be made with sheep, goat or
cows’ milk. Locally available cheeses are made with whole cows’ milk.

Pretty little black nigella seeds sprinkled throughout the cheese
supply texture and a sharp, oregano-like flavor.

The cheese is most attractive served with the strings pulled apart
into a pile of fluffy threads. If stored in brine, it can be quite
salty, as are most Middle-Eastern cheeses. You may rinse the untangled
cheese briefly in cold water to remove some salt if you desire. The
locally available cheeses are in Cryovac and less salty.

Nigella is the seed of Nigella sativa, a less decorative version of
the popular ornamental love-in-a-mist, commonly used in Indian and
Middle Eastern cooking. The teardrop-shaped black seeds have a nutty,
earthy, peppery flavor and are a key ingredient in some Indian spice
mixes. They add both flavor and a bit of crunch to the milky string
cheese.

The Olivia brand cheese pictured can be found at Fresh Market. It is
made in the U.S., in a traditional style containing black nigella
seeds. Other brands of string cheese with nigella are sold at Aihua
International Market.

Armenian string cheese can be used just like fresh mozzarella, and is
very suited for eating cold as a snack, on a sandwich, with flat bread
and relish, or in a salad. It may also be melted in a pita or atop
flatbread, or even used as a pizza cheese.

The accompanying recipe is adapted from Paula Wolfort’s Cooking of the
Eastern Mediterranean, a comprehensive tome of authentic recipes from
Northern Greece to Syria.

Broiled Peppers stuffed with String Cheese

Serves 6- 8 as an appetizer

INGREDIENTS

8-6 large Italian green frying peppers or mild Anaheim-type chilies

– salt

3 tablespoons olive oil

3 tablespoons minced onion

1 tablespoon minced fresh green jalapeño, or less to taste

12 ounces Armenian string cheese, shredded

1 egg, well beaten

11/2 tablespoons fresh lemon juice

– pinch dried oregano or mint

– pinch freshly ground black pepper

DIRECTIONS

1 Use a small knife to make a 1-inch incision halfway around the stem
of the frying peppers. Bring a large pot of salted water to a boil and
cook the peppers for about 5 minutes, or until tender. Set aside to
cool.

2 In a small skillet, use 2 tablespoons of the olive oil and saute the
onion and chile until soft, about 2 minutes. Set aside.

3 When the peppers are cool, remove the seeds. Rinse if you like,
although a few remaining seeds are not a problem.

4 In a bowl, mix the string cheese, egg, lemon juice, oregano or mint,
and pepper. Carefully stuff each pepper with the filling. Wipe any
drips off the surface of the pepper. Brush with the remaining olive
oil, and refrigerate for 1 hour.

5 Preheat the broiler and broil the peppers as far as possible from
the heat until spotted with black on the top, about 6 minutes. Turn
and repeat on the second side.

Over the years of the Karabakh war, the official positions of Armenia
and Karabakh did not coincide, there were serious discrepancies,
Maj-Gen.Arkady Ter-Tadevosyan (a.k.a. Kommandos), hero and veteran
of the Karabakh war, said at today’s press conference dedicated to
the 25th anniversary of the Karabakh movement.

He said that Armenia’s leadership was against almost all offensive
operations. “Originally coming out for the defense of the Karabakh
people, Armenia’s policy changed at some stage. Karabakh had to
ensure its security, and the best way to do that was to make offensive
measures. However, the leadership of Yerevan was against our attacking
and liberating the territories”, he said. Kommandos also stressed
that all the big operations, including those in Khojalu region and
Shoushi were carried out in spite of the Armenian leadership’s will.

He said that the authorities’ team was working to secure peaceful
resolution of the conflict, as a result of which Nagorno-Karabakh
was to remain a part of Azerbaijan. He described how the Khojalu
operation was being postponed. He added that even after the launch
of the operation, Yerevan demanded stopping it. “After the seizure
of Shoushi, Levon Ter-Petrosyan said: “In Tehran I am negotiating on
peaceful resolution, and what are you doing? Who will be responsible
for that?” said Kommandos and added that many officials condemned
the operation in Shoushi. He stressed that a few years later the
successful course of the operation was ascribed to those against the
operation and even condemned it.

Kommandos said that Armenia’s policy started changing only after
Levon Ter-Petrosyan’s resignation. “The incumbent presidents of
Armenia and Karabakh are like-minded people, therefore, there are
no discrepancies. Those who made a mistake criticize the incumbent
authorities for the migration. Wasn’t there any migration or arrests
during their presidency? All my friends either were imprisoned or
left the country”, he said. Kommandos thinks that the Karabakh peace
process should be launched anew: it is necessary to forget the Madrid
principles and invite Karabakh to the negotiation table. Only in this
case the problem may be resolved, he said.

of Armenian origin, the Azerbaijani news agency Haqqin.az reports.

“Mother of the Deputy Minister of Labor and Social Protection Ilgar
Rahimov was representative of a different nationality and even her
funeral was organized not in Muslim traditions but in Christian ones
accompanied with Clarinet music,” he stated.

The site reminds that recently the head of Baku Underground
Tagi Mammadov, while speaking of the presence of Azerbaijanis in
administration who have close kinship with the Armenians, brought the
example of former MP Gular Ahmedova and stated that her grandmother
is Armenian.

Fazail Agamali expressed his solidarity to Tagi Ahmedov, stressing that
“strategic positions should be taken by full-blooded Azerbaijanis.”

“Accusation” in having a kinship with the Armenians is a method of
defamation in Azerbaijan. It is also one of the preferred methods of
the Azerbaijani authorities used in the fight against opponents. In
particular, the official mouthpiece of the ruling party, the newspaper
“Yeni Azerbaijan”, wrote earlier this year that independent journalist
Khadija Ismailova’s grandmother was an Armenian. Khadija Ismailova
had accused the government of corruption. The same “accusation” was
recently heard over the scandal of former MP Gular Ahmadova who was
accused of corruption and is currently under arrest. World-famous
film director Rustam Ibragimbekov was accused of being in relations
with the Armenians and “love” towards them. In August, last year,
that very newspaper, “Yeni Azerbaijan”, wrote that “spiritual love
of Rustam Ibragimbekov towards Armenians is obvious in his works.”

protection, has a mother of Armenian descent, the Azerbaijani media
report, citing a parliament member.

“The mother of Ilgar Rahomov was a representative of another nation
[the report suggests he meant Armenian origins]. Even her funerals
were held in accordance with Christian, rather than Muslim tranditons.

I agree with Tagi Mamedov (head of the Baku underground railway
administration) that strategically important positions must be

Session of the Nagorno Karabakh Autonomous Oblast Council of People~Rs
Deputies passed a petition to appeal to the Supreme Councils of
the Azerbaijani SSR and Armenian SSR for the secession of NKAO from
Soviet Azerbaijan and its transfer to Soviet Armenia, at the same
time appealing to the Supreme Council of the USSR on a positive
resolution of the issue on NKAO~Rs secession from Azerbaijani SSR
and its transfer to Armenian SSR.

The decision was followed by mass rallies in Karabakh and Armenia.

In response to the peaceful demands of Artsakh Armenians, that made up
80% of the total population of NKAO, Azerbaijan unleashed aggression
against the civilians. As a result of 1991-1994 national liberation
war, Nagorno Karabakh Republic was proclaimed, with NKR defense army
forming a security zone of 7 provinces. The cease-fire was signed
in 1994.

The Supreme Body of the ARF has published its statement in regard to
the presidential elections.

According to the ARF, the February 18 election proved that justice and
aspiration for freedom cannot be killed in people. The election showed
that a great part of the society does not recognize the ruling system.

Coordinated breaches during the count of votes were used additionally
to the administrative and financial resources of the authorities. The
outcome of voting showed it was predetermined.

The post-electoral situation, according to the ARF Supreme Body,
implies huge responsibility and hard decisions on the authorities
and the main opponent, oppositional forces and the active part of
the society.

People’s will cannot be violated. The ARF is with people, the statement
reads. The ARF states that a political agenda is needed to lead the
country along the path of stable development guaranteeing secure and
dignified future for the citizens.
